Donc, pour ce deuxi\u00e8me article de la s\u00e9rie, j&rsquo;ai pris mon v\u00e9lo (au bout de 2 autres tentatives, la premi\u00e8re \u00e0 due \u00eatre annul\u00e9e \u00e0 cause des orages violents et la seconde fois, je suis tomb\u00e9 malade), me suis lev\u00e9 le matin pour prendre le train de Portet \u00e0 Pamiers, puis fait les 15 km de v\u00e9lo entre Pamiers et St Amans pour aller entra\u00een\u00e9s pour les cotes !<\/figcaption><\/figure>\n<h1>Guillaume, Boulanger : un mode de vie ?<\/h1>\n<p>Guillaume est boulanger depuis 4 ans. Apr\u00e8s des \u00e9tudes en informatique et en langues \u00e9trang\u00e8res, il a travaill\u00e9 cinq ans en Allemagne.. Et un peu comme moi, il ne s\u2019\u00e9panouissait pas vraiment dans cette activit\u00e9. Rentr\u00e9 en France, il a commenc\u00e9 par faire les saisons agricoles avant de reprendre des \u00e9tudes en \u00ab gestion et protection de la nature \u00bb. Apr\u00e8s cela seul l&rsquo;agriculture lui par\u00fbt essentielle comme outil de pr\u00e9servation de l&rsquo;environnement. Arriv\u00e9 en Ari\u00e8ge, il travaille en mara\u00eechage bio-dynamique quelques ann\u00e9es avant de rencontrer le pain et son alchimie.<\/p>\n<p>En 2012, il s&rsquo;installe comme boulanger. Depuis, il pr\u00e9pare tous les jeudis le pain pour pour un march\u00e9, un restaurant, une \u00e9picerie et plusieurs AMAP, dont celle dont je fait partie \u00e0 Villeneuve Tolosane, pr\u00e8s de Toulouse. C&rsquo;est aussi le plus vendu. Il est fait \u00e0 partir de farine semi-compl\u00e8te (type 80-100) provenant des vari\u00e9t\u00e9s anciennes de bl\u00e9s, produites en Ari\u00e8ge.C&rsquo;est un pain \u00ab\u00a0de tous les jours\u00a0\u00bb, compos\u00e9 de sucre dit rapide.<\/li>\n<li><strong>Le pain de petit \u00e9peautre :<\/strong> Il est reconnaissable \u00e0 sa couleur jaune et \u00e0 son go\u00fbt d&rsquo;\u00e9pice ou de noix. Cette c\u00e9r\u00e9ale ancienne, aussi appel\u00e9e \u00ab engrain \u00bb a un faible rendement en comparaison des bl\u00e9s modernes. Tr\u00e8s rustique, elle est moins sensible aux maladies, elle s\u2019accommode de sols pauvres et de conditions m\u00e9t\u00e9os difficiles. Le petit \u00e9peautre contient moins de gluten que le bl\u00e9 moderne et sa nature diff\u00e8re : il est beaucoup moins tenace et \u00e9lastique, en d\u00e9coule une plus grande facilit\u00e9 de digestion pour les personnes sensibles. C&rsquo;est mon pain pr\u00e9f\u00e9r\u00e9 pour le soir.<\/li>\n<li><strong>Le pain de seigle<\/strong> est plus acidul\u00e9 que les deux pr\u00e9c\u00e9dents, De saveur \u00e9pic\u00e9e prononc\u00e9e et de couleur brune, il est fait \u00e0 partir d&rsquo;une c\u00e9r\u00e9ale rustique tol\u00e9rant les terrains pauvres et froids. C\u2019est le pain de nos campagnes d&rsquo;antan. Tr\u00e8s appr\u00e9ci\u00e9 de par ses valeurs nutritives, il est souvent d\u00e9laiss\u00e9 des boulangers car plus difficile \u00e0 panifier. Sa p\u00e2te colle fortement&#8230; Le pain de guillaume est compos\u00e9 d\u2019un m\u00e9lange 2\/3 de seigle et 1\/3 de bl\u00e9s anciens (le pain pur seigle est plus compact, il est encore tr\u00e8s consomm\u00e9 dans les pays nordiques). Un pain constitu\u00e9 \u00e0 la fois de bl\u00e9 et de seigle est appel\u00e9 pain de m\u00e9teil. C\u2019est le pain que je pr\u00e9f\u00e8re le matin pour sa consistance. Le levain est constitu\u00e9 uniquement de farine et d&rsquo;eau. Ces deux ingr\u00e9dients rentrent en fermentation gr\u00e2ce aux diff\u00e9rentes esp\u00e8ces de bact\u00e9ries et levures sauvages pr\u00e9sentent dans l&rsquo;air et sur les enveloppes du grain. R\u00e9sum\u00e9 grossi\u00e8rement les bact\u00e9ries d\u00e9gradent les sucres de la farine et produisent des acides (elle participent aux ar\u00f4mes du pain), les levures, quant \u00e0 elle, d\u00e9gradent les sucres pour faire du gaz carbonique et de l&rsquo;alcool. Le gaz carbonique est emprisonn\u00e9 de le r\u00e9seau glut\u00e9nique du pain et fait l&rsquo;alv\u00e9olage, l&rsquo;alcool est \u00e9vapor\u00e9e \u00e0 la cuisson. Jusqu&rsquo;au XVIII si\u00e8cle c&rsquo;\u00e9tait la seule mani\u00e8re de faire du pain lev\u00e9.<\/p>\n<p>Le pain au levain a un ar\u00f4me plus parfum\u00e9 et l\u00e9g\u00e8rement acidul\u00e9 par rapport \u00e0 la levure de boulanger (une unique esp\u00e8ce cultiv\u00e9e et s\u00e9lectionn\u00e9e en laboratoire). Un pain au levain subit de profondes transformations lors de sa longue fermentation. Le travail des tous les micro-organismes qui le compose le rendent plus digeste donc plus nutritif et de bonne conservation. Les pains \u00e0 la levure (fermentation courte et monosp\u00e9cifique) sont juste tr\u00e8s gonfl\u00e9s. Le levain de Guillaume est un levain qu\u2019il \u00ab nourrit \u00bb pr\u00e9cieusement depuis 6 ans. Le mercredi soir, veille de la fourn\u00e9e, il le sort du frigo o\u00f9 il \u00e9tait en l\u00e9thargie pour l&rsquo;activer avant de pouvoir l&rsquo;utiliser pour la panification du lendemain. Cette activation, il la r\u00e9p\u00e8te trois fois, ce sont les \u00ab rafra\u00eechis \u00bb. Le levain est nourri avec de la farine et de l&rsquo;eau, il fermente, puis on le nourrit \u00e0 nouveau, trois fois. L\u2019eau est absorb\u00e9e par la farine. Les quantit\u00e9s d\u2019eau, de farine, de sel et de levain sont calcul\u00e9es la veille par Guillaume. La temp\u00e9rature de la p\u00e2te est importante pour une fermentation r\u00e9ussie (autour de 25\u00b0c). La temp\u00e9rature id\u00e9ale de l&rsquo;eau est donc estim\u00e9e en fonction de la temp\u00e9rature de l&rsquo;air et de celle de la farine.<br \/>\nLe sel est d&rsquo;abord dissout dans l&rsquo;eau. La farine est vers\u00e9e dans le p\u00e9trin puis mise sur les c\u00f4t\u00e9s. L&rsquo;eau sal\u00e9e est ensuite vers\u00e9e au milieu. Le levain est \u00e0 son tour mis dans le p\u00e9trin.<br \/>\nLa farine est ensuite incorpor\u00e9e petit \u00e0 petit \u00e0 l&rsquo;eau.<br \/>\nLe p\u00e9trissage, outre le m\u00e9lange des ingr\u00e9dients, permet le d\u00e9roulement des mol\u00e9cules de gluten et l&rsquo;incorporation d&rsquo;air dans la p\u00e2te. Les mol\u00e9cules de gluten vont s&rsquo;\u00e9tendre, se lier entre elles et cr\u00e9er le fameux r\u00e9seau glut\u00e9nique capable de retenir le gaz carbonique issu de la fermentation et ainsi d&rsquo;obtenir un pain lev\u00e9.<br \/>\nGuillaume p\u00e9trit des p\u00e2tes assez fermes, d&rsquo;autres boulanger des p\u00e2tes plus liquides avec plus ou moins de levain, des temps de fermentations plus ou moins long et une temp\u00e9rature de p\u00e2te plus ou moins \u00e9lev\u00e9e. Outre le pain il travaille aussi beaucoup \u00e0 l\u2019\u00e9change et au troc. Enfin, depuis l&rsquo;ann\u00e9e derni\u00e8re, il a commenc\u00e9 un travail de s\u00e9lection en plein champ sur diff\u00e9rentes vari\u00e9t\u00e9s de petit \u00e9peautre. Il a mis cette ann\u00e9e un hectare de bl\u00e9s anciens en culture d&rsquo;une population provenant de la ferme du Roc en Lot et Garonne avec lequel il souhaiterait faire son pain l&rsquo;ann\u00e9e prochaine.
